About Russian Beauty Persimmon

The Russian Beauty (often sold under its original name, 'Rosseyanka') is actually a cold-hardy hybrid cross between the American persimmon and the Asian persimmon, prized for combining the best traits of both species. It produces medium-sized, nearly seedless fruit (about 2–3 inches) that is astringent until fully soft, at which point it develops a sugary, custard-like texture with a spicy, rich flavor. This variety is exceptionally cold-hardy (reportedly surviving temperatures as low as -20°F to -30°F) and vigorous, ripening its fruit late in the season, often hanging on the tree like orange ornaments after the leaves have fallen.

Flavor Profile

When fully ripe and soft, it features a melting, jelly-like texture with an intensely sweet, complex taste reminiscent of burnt sugar, apricot jam, and spiced custard.

Uses

Ideally suited for processing into sweet baked goods like puddings, breads, and cookies due to its soft, custard-like pulp, this variety is also excellent for dehydrating into dried fruit leather or simply eating fresh by scooping the jelly-like flesh with a spoon.
