About Prairie Dawn Persimmon

The Prairie Dawn H-55A is a superior American persimmon cultivar bred by James Claypool in Illinois, originating from a cross between the 'Juhl' and 'Garretson' varieties as part of his cold-hardy "Prairie" series. It is celebrated for its early ripening habit and exceptional hardiness (down to -25°F), producing heavy crops of large, sweet, golden-orange fruit that are typically seedless unless cross-pollinated. This variety is particularly historically significant for extending the range of quality persimmon growing into northern climates where other varieties fail to mature before the first frost.

Flavor Profile

Compared to the often soft or mushy texture of typical wild American persimmons, Prairie Dawn is distinguished by its notably firmer flesh and exceptional sweetness that rivals the rich, complex flavor of standard-bearers like 'Early Golden' but in a larger, earlier-ripening fruit.

Uses

Best enjoyed fresh due to its uniquely firm and sweet flesh, this variety also excels when pureed for use in traditional baked goods like puddings, breads, and cookies.
